"Candied" Bacon Maple Waffles!

Jared turned 28 yesterday, and he hardly ever asks for anything, but he asked if I could make waffles with bacon in them for breakfast, so of course I did. This what I came up with!

So first, here are the ingredients:
  • 1/4 package of bacon cut into tiny strips
  • 2 teaspoons of cinnamon
  • 2 teaspoons of brown sugar
  • 1 1/2 cups of all purpose flour
  • 3 teaspoons of baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 eggs
  • 3 tablespoons melted butter

First, I made the bacon. I used a quarter of the bacon pack and cut it up into tiny slices.

Once it was done, I crumbled it up and added the brown sugar and cinnamon to the bowl and tossed the bacon. I microwaved the bowl for about 15 seconds to get everything good and sticky. (If you'd like to candy bacon the "real" way, the best recipe is here. The Epic Meal Time dudes cuss a lot, but they sure can cook. I ran out of time this morning, so I made candied bacon the cheater way.)

Then, I made the waffle batter by adding the rest of the ingredients to a bowl and whisking until smooth.

I dumped the bacon with the excess brown sugar and cinnamon into the bowl.

Even little kitty cats want some!

The waffle maker did the rest of the work for me, but if you don't have a waffle maker, you could make them into pancakes! They turned out delicious!

Jared was so happy! And so cute!

Yesterday was a fun day, and and I'm so glad I got to share another year with Jared. He works hard and is so fantastic to me in ways that I don't deserve. He deserves candied bacon maple waffles every day!
