Skillet Cookie Review!


Jared and I had supper with our friends Jared and Jess last night, and I was responsible for dessert, so I scoured pinterest to find the perfect dessert recipe. I found this one from Cooking Classy and it turned out great! The original recipe called for molasses, but I followed her suggestions for a substitute, and it came out great!

Here are the ingredients with the substitutions already in place (because who keeps vanilla bean paste and molasses in their cabinets?)


1 1/2 cups all-purpose flour
1 tsp cornstarch
1/2 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1/2 cup butter, softened
1/2 cup light brown sugar
1/4 cup plus 2 Tbsp granulated sugar.
2 1/2 Tbsp original or french vanilla coffee creamer powder
1 large egg
1 tsp vanilla extract
1/2 cup milk chocolate chips
1/2 cup semi-sweet chocolate chips

Preheat your oven to 350 degrees. While it's heating up, whisk together in a mixing bowl flour, cornstarch, baking soda and salt. In another bowl, whip together the butter, granulated sugar, brownsugar, and coffe creamer until it is pale and fluffy, which is around 4 minutes. Then mix in your egg and your vanilla extract. Add the dry ingredients until they are combined, but don't over mix. Add the chocolate chips into mixture, and then press into greased skillet. Bake for 30 minutes!



I meant to take a picture of how it turned out once we got to Jess and Jared's house, but I got too excited and we started eating it first.


 It turned out thicker than I expected it to, so it was more like an actual cake than a cookie cake, but either way it was delicious!
